Sweet potato gnocchi with rosemary and garlic sauce.
This was very much an experiment that Husband-Gusto relished. I peeled and boiled 3 small sweet potatoes until tender. Then I mashed the potatoes and added white flour until it made a dough. This was very much by feel……. maybe 7-8 heaped tablespoons of flour mixed in gradually until there was a proper dough that capable of being rolled out. After this I rolled the dough into sausages, cut into inches and stabbed them with a fork. I then chilled the gnocchis for several hours and when ready to cook I added to boiling salted water. By the time the gnocchi rises to the top (about 4 minutes) they are done. The sauce was a simple sauce of olive oil, a sprig of rosemary, 1 crushed garlic, salt and pepper. Husband-Gusto enjoyed this dish alot. I was less keen. Perfect however with a green salad.
