This was a bit of an experiment, and I justified the odd flavour combo by telling myself that if it was awful then I would add alot of curry powder and just have curried veg soup.
Well, it was not awful. It was a slightly spicy, deep and velvety soup.
1 large onion diced
3 medium sweet potato – diced
2 medium red apples – peeled and diced
1 cinnamon stick
Add all ingredients (except cinnamon) to olive oil and sautee for 10 minutes. Add 3 litres hot water, cinnamon and stock. Simmer for 40 minutes. Remove cinnamon stick, blend and serve.
