Latkes – Potato pancakes


One of my favourite comfort foods. Latkes are simply grated potato and onion that is fried into crisp delightful little pancakes. Traditionally served with sour cream and/or apple sauce.

1 large baking potato grated

1/2 large onion grated

1 egg beaten

1-2 tablespoons white plain flour

3-4 tablespoons vegetable oil

Grate the potato and onion and leave in a colander for a while, occasionally squeezing it to extract as much moisture as possible. Mix in the egg and flour, shape into palm-sized patties. Put a good 3-4 tablespoons of vegetable oil (I use canola) into a frying pan and when very hot add the patties, flattening them down until they are about half an inch thick. Cook until golden brown on each side. Add salt and pepper and enjoy!
