I rarely make desserts and I never bake. H-G is the baker in the family, and I avoid it.
But today I decided to make a quick pear tea cake, as B-G and I were going on a play date and I thought it might be nice to take something home made. I have made this before with apples but did not have any today so used pears. The inspiration originally came from the first ever food blog I read and fell in love with, Chocolate and Zucchini.
Ingredients
4 pears, peeled and sliced.
110 gm unsalted butter, melted
1 tablespoon butter for greasing
70 gm self raising white flour
1 teaspoon bicarbonate of soda
1/4 teaspoon salt
170 gm white sugar
2 eggs
cinnamon for sprinkling
Method
Preheat oven to 180 degrees celsius. Grease a rectangle loaf tin with some of the melted butter.
Layer the bottom with the pear slices
Combine flour, bicarb soda and salt into a mixing bowl
mix sugar and eggs and whisk until combined
Add eggs and sugar to flour and combine, then add melted butter to a smooth thick paste.
Pour over pears.
Sprinkle cinnamon
Cook in oven for 40 minutes. Lay out on a rack and let cool.
This was very very moist and tasty. It would be nice hot served with chocolate fudge sauce.
I like the idea of the hot chocolate fudge sauce….. such decadence, but so very, very nice!!
